5 Quick Workweek Vegan Meals

Here’s some real quick ideas for those days you’re short on time. They’re not meant to impress guests with beautiful vegan cooking, nor are they “Whole 30” worthy.

They’re meant to be fast, hot & hearty meals that you and your family will love. You’ll see a lot of mock meats here which have been shown to be the most amenable to family members who aren’t ready to go plant based (or vegan at all for that matter.)

The links are from Walmart to reinforce the point that veganism can be accessible and affordable (but we already knew that 😉.) Consider doing an online order of these and stick the perishables in the freezer for those busy seasons so you’re ready in a snap.

Here we go:

Vegan Ramen + Broth + Frozen Stir Fry Veggies + Crumbled Tofu + Soy sauce & Sriracha = Noodle Bowl

French Bread + Vegan Meatballs + Sauce + ‘Mozzarella’ = Meatball Subs

Curly Fries + Vegan Bratwurst Links + Frozen Peppers & Onions = Delicious Hot Plate

Vegan Pre-Grilled Chicken + Broccoli + ‘Mac’ & Cheese = Chick’n Broccoli Mac

Bag of Salad + Soup. Croissants baked with + Tofurky + Cheese = Something for Everyone

Sometimes we have an hour to cook, sometimes only 20 minutes. Remember, do your best, serve what you can, and feel good about putting dinner on the table!
