Grab & Go: Handheld Vegan Meals

I’m not sure about you, but the pace tends to pick this time of year in our house. Now that my days at the office are increasing (R.I.P. telework đŸ˜©â€Š) time is even more precious and we have to get more creative in the kitchen.

My family is still warming up to these, but I’ve been loving just about anything I can bake or roll into bread.

Here’s some ideas that you can adapt to what you like or whichever leftovers you may have on hand:

  • Roll tofurky and vegan cheese in tubed crescent rolls and bake to package directions. They come out like flaky grilled cheeses that you don’t have to babysit and make individually. If you’d prefer something less processed, try spreading refried and/ or whole beans inside instead with chopped tomatoes and a sprinkle of taco seasoning.
  • Give your leftover salad greens a second chance. Toss in salad veggies as you’re able, dressing, and lots of garbanzo beans to give it more substance (leave out the croutons.) Roll it tightly into a large wrap and keep together with foil or wax paper.
  • Make “hot pocket” type handhelds with tubed biscuits (like the crescents from #1, most are vegan now.) Roll out each biscuit with a rolling pin, add ingredients, then fold over and press the edges together with a fork to seal. Leftover taco “meat” and vegan cheddar, or smashed up “meatballs” and sauce are good options.

These come in handy when we’re all too engrossed in our own things to sit at the table together for a proper meal. On Saturdays my kids like to eat by their video games and that’s fine for us right now. My husband and I are hungry at different times so this way we can eat when it works for us between errands and yard work, and they do fine sitting out on the counter for a little bit.

These won’t win you any cooking competitions but are great for leftovers and especially busy seasons.
