Love for Valentine’s Day (& Cake)

If come Valentine’s Day, your kids are sorting through neon colored candies from school, and your husband forgot that the chocolates in the heart shaped box from CVS have milk in them, here is something you can make for yourself. 

As with all our ‘no-recipe’ formulas, these ingredients are pretty common and can easily be swapped out for something similar. Because this is meant to be microwaved in one mug, we recommend the “Parts” in the formula below to be Tablespoons.  

Chocolate Mug Cake

  • 2 part flour (white or wheat; if you’re going gluten free add a dash of a “binder” [cornstarch, agar agar, xanthan gum])
  • 2 part unsweetened cocoa powder
  • 2 part sugar
  • 3 parts non-dairy milk (almond or soy, sweetened or unsweetened)
  • 1 part fat (canola, peanut, or corn oil, or melter vegan butter)
  • Pinch salt
  • Teensy bit baking powder
  • Dash vanilla
  • Toppings to taste: chocolate chips, shredded coconut, strawberries, vegan whipped cream

In a big mug, mix the dry first ingredients first then add in the wet. Nuke in the microwave for about 45 seconds. 

On a more serious note, when I think of Valentine’s Day and being a vegan, I feel good that I am really expressing the idea behind the holiday: love. Love for vulnerable creatures. Love for our fellow man who is experiencing the negative consequences of living next to an animal processing plant. Love for our planet who continues to provide for us despite what’s happening to it. The love I show my family by overcoming challenges that come with, what can feel at times, serving meals according to a limited diet. 

It’s this love, and living according to my values, that carries me through struggles in my vegan journey. It’s not always perfect, but it’s what I feel deep down in my heart to be right.
